Chocolate Banana Energy Balls
Y’all know I’m obsessed, and here’s another new flavor combo to add to the mix: banana, chocolate, peanut or sunflower butter!
Great on-the-go snack that’s:
✔️will quench that afternoon sweet tooth (yours or the kiddos)!
1 1/4 cups rolled oats (Gluten-free if needed)
2 tablespoons chia seeds
1/2 cup nut butter of choice
1/3 cup honey (maple syrup if going vegan)
1 teaspoon pure vanilla extract
1/4 teaspoon kosher salt
2 tablespoons cocoa powder
1/2 cup freeze dried bananas
1/2 cup crushed freeze dried bananas (to coat finished balls)
Combine all but crushed freeze dried bananas in food processor and blend until you get an evenly distributed crumby mixture.
If you don't have a processor or blender: place ingredients in a large mixing bowl and stir to combine.
If the mixture seems too wet, add a bit more oats. If it’s too dry, add a bit more nut butter. It should resemble a somewhat sticky dough that holds together when lightly squeezed.
Place the bowl in the refrigerator for 30 minutes to set (this will make the balls easier to roll later on).
Remove the bowl from the refrigerator and portion the dough into balls of desired size.
