No Bake Energy Balls

This is another example of a kitchen sink recipe: it’s really versatile and you can pack lots of good-for-you ingredients into a little 'package'.
We’ve got fiber, plant-based protein, healthy fats, vitamins, minerals, anti-oxidants…
It’s allergen friendly – top 8 free and great for breakfast or snack time!

No Bake Energy Balls
Ingredients:
1c sunflower butter (or nut butter of choice)
¼ c honey or 3-4 pitted dates
1 tsp vanilla extract
½ tsp ground cinnamon
2 Tbsp unsweetened cocoa powder
3 Tbsp pumpkin seeds
¾ c rolled oats (we use gluten-free)
1 Tbsp ground flax/flax meal
~½ c unsweetened shredded coconut (optional)
Other add-in options: dried fruit, nuts, dark chocolate bits, chia, hemp…
Directions:
Place pumpkin seeds and oats in food processor and pulse until just broken down a bit, a couple of seconds.
Add everything else and pulse until everything is evenly combined, you may need to scrape down the sides. It should stick together pretty easily when compressed in your hand.
Roll into balls and chill/freeze until ready to eat. I tend to make mine small, no larger than the diameter of a quarter.
Optional: you can roll balls in coconut prior to chilling/freezing.
