Vanilla Chia Pudding with Fresh Peach and Blueberry Puree

Farmer’s Market Makes: Day 3!

The fruit at the market was mouthwatering. There is nothing better than sweet, ripe peach dripping down your chin! While we could have eaten a whole bushel as is or made a simple crisp, or even a peach salsa, I decided to try something different. Wanting the fruit to be the star of the show, we started with a vanilla chia base and simply topped it with the fresh pureed blueberries and peaches. It was like dessert for breakfast. Though you can really have this anytime: morning, afternoon snack or dessert.


Creamy vanilla combined with the tart sweetness of the fruit! Mmmmmm – I love summer! Bon Appetit!


Ingredients:

  • 1 cup soy milk (or milk of choice)

  • 1 tsp pure vanilla extract (or more to taste)

  • Optional: 1 very ripe banana, mashed

  • 1 tsp cinnamon

  • 1/4 cup chia seeds

  • 1 cup fresh (or frozen) fruit of choice

  • Optional: fresh mint leaves

Recipe:

  • Combine milk, vanilla, cinnamon, and mashed banana, if you want. Then add chia seeds. Mix, cover and refrigerate for at least 6 hours.

  • Meanwhile, use immersion blender to puree fruit.

  • To serve: layer chia, puree, chia and more puree! Top with mint and enjoy!
