Black Bean and Sweet Potato Bowl


It’s not hard to ‘eat the rainbow’ when the rainbow looks and tastes like this! There isn’t much of a recipe here, more of a cutting bonanza, followed by sprinkling of spices here and there, but the results are TA.DIE.FOR!🌈


✅ Plant-based protein

✅ Fiber

✅ Anti-oxidants

✅ A lot of other good stuff, trust me!


Get those kids in the kitchen and let them make their own bowls!





Ingredients:

  • 2 cans no added salt black beans, drained

  • 1Tbsp Cumin (extra for sprinkling)

  • 2Tbsp Chili powder (extra for sprinkling)

  • 1/2tsp Smoked paprika

  • 1 tsp Onion powder

  • 1 tsp Garlic powder

  • Salt to taste

  • 1 Tbsp EVOO

  • Rice, cooked

  • Sweet potatoes, chopped

  • Avocado, tomatoes, bell peppers, mango (any other toppings you like) chopped

  • Cilantro, chopped


Directions:

  • Turn oven on to 375. Place sweet potatoes on sheet pan, toss with EVOO and sprinkle with chili powder, cumin, and salt. Roast for 15 min, flip and roast for another 15 minutes until browned and soft.

  • Meanwhile, combine beans, spices and salt and heat.

  • Prepare rice according to instructions.

  • Build your rainbow and enjoy!
