Caprese Salad with Balsamic Chicken
So fast and soooo good! When you sauté the chicken, the balsamic caramelizes, creating a sweet and savory party in your mouth!
Build your salad how you wish. We used what we had on hand: tomatoes, mozzarella, arugula and pancetta. Would have loved pine nuts, but G is allergic. ☹ Then top with sautéed chicken and a nice chunk of French bread.
1 pound chicken breast
1 tsp dried rosemary
½ tsp salt
1 tsp onion powder
1 tsp garlic powder
¾ c balsamic vinegar
½ c EVOO
Crush rosemary with mortar and pestle and combine with salt, garlic powder, onion powder, balsamic and EVOO in a large sealable plastic bag.
Dice chicken into ~1 inch cubes. Marinate for 1 hour up to 1 day.
Sauté chicken on medium high heat until cooked through. Chicken will look dark quickly – that’s just the balsamic caramelizing!
Build salad and enjoy!
