Ingredients:
2 very ripe bananas
2 cups oats (gluten free if needed)
2 tsp pure vanilla extract
1/3 cup dark choc chips
about 6 ripe strawberries
Directions:
Preheat oven to 375°F and line a baking sheet with parchment paper. In a medium bowl, mash banana with the back of a fork until there are minimal lumps. Mix in vanilla, oats, and chocolate chips.
To make strawberry hearts, cut a V shape in the top of the strawberry to remove the leaves. Then, slice strawberry in half lengthwise to make two hearts.
Form mixture into balls with hands and place on lined baking sheet. Lightly press flat. Add one strawberry on top lighting pressing down.
Bake for 15 minutes. Let cool on the pan for 5 minutes. Enjoy!
Cook's note: They taste best still warm from the oven, but can be refrigerated for munching on later!
