Crunchy Tofu Avocado Sandwich
What was the secret ingredient in this sammie that gave it the perfect crunchy bite? I'll give you a hint - it's loaded with protein, fiber, and B vitamins (especially B12, something vegans and those who eat minimal meat can become deficient in). It's flavor? Nutty, cheesy, savory, umami deliciousness.
It's nutritional yeast! If you haven't tried it, you really should. It's one of those intimidating ingredients, that really shouldn't be. How else can it be used?
Sprinkled over popcorn or pasta
Stirred into soups
As a “cheese” flavoring in vegan sauces
A thickener for soups and sauces
1 block extra firm tofu, pressed to remove excess water
1/4c oil (avocado, canola, or EVOO)
3 Tbsp corn starch
4 Tbsp nutritional yeast
2 tsp garlic powder
2 tsp onion powder
1/2 tsp turmeric
1 tsp kosher salt
Bread of choice to make 4 sammies
toppings of choice (we used avocado, tomato, arugula and a homemade ranch with just sour cream and ranch mix)
To make tofu: Combine oil, corn starch, nutritional yeast, spices, and salt and stir to make "marinade". Cut tofu lengthwise into 4 patties and coat with marinade. Let sit for at least 30 minutes, the longer the better.
Heat non-stick pan to medium high heat, spray with cooking spray and cook tofu patties for about 3-4 minutes on each side until golden brown.
Assemble sandwiches with toppings of your choosing and serve warm!
Note: I made a little homemade ranch to go with this with some sour cream and store bought ranch spice mix. I'm going to work on a vegan homemade version and will update this recipe as soon as I have an amazing one for you guys!
