Easy Mango Guacamole

Who doesn't love guacamole?! But, have you tried it with creamy, sweet mango? If you haven't, you need to.

This is dish is:

  • Loaded with heart healthy fats, vitamins, and minerals

  • Sure to impress anyone who tries it

  • Incredibly easy to make

  • Kid-friendly - can be served a la carte if they don't like things mixed up or don't love a certain ingredient... I'm looking at you, onions! ;)

  • Very versatile! Spice it up, keep it tame, switch out mango for pineapple or peaches... yo do you, boo!

  • Great to enjoy with chips, veggies, a quesadilla, some grilled salmon, chicken.... or just a spoon!

Ingredients:

  • 2 avocados

  • ~2 Tbsp finely minced red onions

  • 1/4 tsp kosher salt (adjust to taste)

  • 1 jalapeno, seeded and finely diced (omit if you don't like heat)

  • 1 lime, juiced

  • 1 mango, diced

  • ~1/4 cup fresh cilantro leaves


Directions:

  • Halve avocados, remove pits and skins, and dice. Add avocado, red onions, salt, jalapenos, lime juice, mango, and cilantro and stir gently to combine.
