Fast and Easy Black Bean Hummus
After wondering just how it can cost $5.99 for a few ounces of store bought black bean hummus, I said to myself, "Self? I bet I can make this for a fraction of the cost and it will taste just as good." And so I did!
Slather it on a spinach wrap loaded with veggies for a super fast lunch. Dip some veggies, chips, or homemade pita bites in it. However you eat it, I'm pretty sure you'll love this one!
15 oz. can of black beans, including liquid
1 clove garlic
2 Tbsp. EVOO
2 Tbsp. tahini
1 lime, juiced
1/2 tsp. cumin
1/2 tsp. ground coriander
1/8 tsp. salt
Add reserved liquid from black beans (or cooking liquid), garlic, olive oil, tahini, lime juice, cumin, ground coriander, and salt to a food processor. Blend on low for 1 minute, until smooth and frothy.
Add the black beans to the food processor. Blend on high for 1 minute, then scrape the sides down with a spatula and blend for another minute, until smooth and creamy,
