Fast and Easy Black Bean Hummus


Delicious? Check.

Healthy? Yup.

Easy-to-make? Surprisingly.


After wondering just how it can cost $5.99 for a few ounces of store bought black bean hummus, I said to myself, "Self? I bet I can make this for a fraction of the cost and it will taste just as good." And so I did!


Slather it on a spinach wrap loaded with veggies for a super fast lunch. Dip some veggies, chips, or homemade pita bites in it. However you eat it, I'm pretty sure you'll love this one!

Ingredients

  • 15 oz. can of black beans, including liquid

  • 1 clove garlic

  • 2 Tbsp. EVOO

  • 2 Tbsp. tahini

  • 1 lime, juiced

  • 1/2 tsp. cumin

  • 1/2 tsp. ground coriander

  • 1/8 tsp. salt


Directions

  • Add reserved liquid from black beans (or cooking liquid), garlic, olive oil, tahini, lime juice, cumin, ground coriander, and salt to a food processor. Blend on low for 1 minute, until smooth and frothy.

  • Add the black beans to the food processor. Blend on high for 1 minute, then scrape the sides down with a spatula and blend for another minute, until smooth and creamy,
