Green Monster Muffins


After our “Monkey Oats” breakfast, I got on a kick of finding meals with names that the kids would find fun and came across this GREEN MONSTER MUFFIN recipe.


These turned out great, incredibly dense and moist. They did have a mild earthy flavor to them (there is 5 cups of spinach in here, folks) that I thought the kids might not like, but they devoured them!

What a great way to pack in the nutrition and clear out the kitchen of foods that might be getting a little “past their prime”.

Ingredients:

  • 2 cups rolled oats

  • 1/4 cup chia seeds

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 2 tsp cinnamon

  • 1/3 cup honey

  • 1/2 cup milk (or milk alternative)

  • 5 cups spinach

  • 1/4 cup butter, softened

  • 3 ripe bananas

  • 2 extra large eggs

  • 2 tsp vanilla

  • 1 cup dark chocolate mini-chips


Directions:

  • Preheat oven to 375 F and grease 1 12-cup muffins tins (mine were medium sized, this will vary depending on the size of yours).

  • Place dry ingredients in a good quality blender and pulse until finely blended.

  • Transfer to a medium sized bowl

  • Place wet ingredients into the blender and blend until smooth.

  • Add dry ingredients back, and on low speed, gently blend until smooth.

  • Fold in chocolate chips.

  • Fill muffin tins and bake for 20-25 minutes, or until baked (if you press on top of muffin, it will bounce back).
