Lemon Blueberry Chia Pudding


This blueberry lemon chia pudding is full of creamy, bright, sweet, and crunchy deliciousness. Need any more convincing? Well it's also:

Ingredients:

  • 1 cup unsweetened soy milk (or milk of choice)

  • Zest of 1 lemon (For a more lemon-y flavor, squeeze juice of half a lemon in there too)

  • 1 tsp cinnamon

  • 1 banana, very ripe

  • 1 cup blueberries (fresh or frozen)

  • 6 Tbsp chia seeds

  • For layering: lemon yogurt, granola, fresh blueberries

Directions:

  • Add blueberries, lemon zest (and lemon juice), banana, milk, and cinnamon to a blender. Blend on high until smooth.

  • Transfer fruit mixture to a bowl. Stir in the chia seeds until well combined.

  • Cover and set in the fridge overnight.

  • Serve: Stir the mixture again before serving, then layer with yogurt, granola and blueberries.
