Ingredients:
1 cup unsweetened soy milk (or milk of choice)
Zest of 1 lemon (For a more lemon-y flavor, squeeze juice of half a lemon in there too)
1 tsp cinnamon
1 banana, very ripe
1 cup blueberries (fresh or frozen)
6 Tbsp chia seeds
For layering: lemon yogurt, granola, fresh blueberries
Directions:
Add blueberries, lemon zest (and lemon juice), banana, milk, and cinnamon to a blender. Blend on high until smooth.
Transfer fruit mixture to a bowl. Stir in the chia seeds until well combined.
Cover and set in the fridge overnight.
Serve: Stir the mixture again before serving, then layer with yogurt, granola and blueberries.
