The kids were NOT HAPPY when they came down for breakfast and saw this ‘weird looking’ new concoction, but then I made this whole story up about how the kids were monkeys and I had made them MONKEY OATS for breakfast. Because it is, OF COURSE, what monkey's eat!
I added mashed banana and sunflower butter to these overnight oats, making it the perfect monkey meal!
BTW - it was delicious, tasted like a banana oat muffin!
1 mashed banana
2 cups milk of choice
2 tsp vanilla
2 Tbsp sunflower or nut-butter of choice
1 cup oats
1/4 cup chia seeds
Fruit of choice for topping
Mash banana in a medium bowl.
Add milk, vanilla and suflower or nut butter, and stir until combined.
Add oats and chia. Stir again, cover and refrigerate overnight.
Dish up in the morning and top with fruit of choice.
