Crispy peanut butter chocolate quinoa bars

Anyone want a fast, easy, and delectable homemade snack... that's also packed with nutrition? Maybe the question should be who doesn't?! I saw a version of these made on Insta, and had to try my hand at making them just a little more nutrient dense. They're also:

  • Vegan

  • Gluten Free

  • Loaded with plant protein and fiber

  • Naturally sweetened

  • Kid friendly

  • 1 cup quinoa

  • 1 cup peanut butter powder

  • 1 Tbsp. cocoa powder

  • 10 pitted dates

  • 1/3 cup water

  • 1/4 cup coconut oil

  • 1/4 cup soy milk (or milk of choice)

  • 1/8 tsp salt


  • Heat pan to medium high heat and add quinoa. Toast for about 5 minutes until the quinoa begins to pop and it becomes golden in color, stirring occasionally so it doesn't burn. Remove from the heat and immediately place in a bowl. Set aside.

  • Meanwhile, combine dates and water in a small blender (I used the individual cup attachment I have for my blender), and blend on high until pureed, about 1 minute. If mixture gets stuck, add a little more water, 2 Tbsp. at a time and continue blending.

  • Add date mixture and the rest of the ingredients to the bowl with the quinoa and mix to combine, then transfer the mix into a loaf pan lined with parchment paper (I used wax paper and it didn't work so well).

  • Place in refrigerator for 1-2 hours until the bars firm up, then slice and enjoy!

  • Store in the fridge or freezer.
