Opa, Greek Burgers!

Such a yummy way to change up burger night… We serve this with lots of veggies as a topping and the kids eat it up. Probably because it’s got gooey warm feta on there, but whatever works is my mantra these days!

The picture may be misleading... I should have cut my veggies smaller so they'd actually fit on to the burger, but it just morphed into a salad - all good!

Bon Appetit!


Burger -

  • 1/3c breadcrumbs

  • 1 egg beaten (can be left out if you’re egg free)

  • ½ envelope dry Italian salad dressing mix

  • 1 pound meat of choice

Topping -

  • ½ envelope dry Italian salad dressing mix

  • 2tbsp red wine vinegar

  • 2tsp EVOO

  • 1c finely chopped tomatoes

  • 1c finely chopped cucumbers

  • 1/4c finely chopped olives of choice (rinsed, don’t like ours too salty)

  • 1tbsp finely chopped Vidalia onion


  • Buns, pita bread or lettuce

  • Feta cheese to taste


  • In a bowl, mix all of the burger ingredients, make patties and set aside.

  • In another bowl, mix the dressing, vinegar and EVOO. Chop veggies up and toss in bowl to coat.

  • Grill, pan fry or broil burgers on medium high heat until cooked to temp (dependent on meat of choice). Just as you take the burgers off, place feta on top to melt.

  • Top with veggies and enjoy!
