Roasted Cinnamon Sweet Potatoes


Packed with vitamins, minerals, antioxidants and fiber, look no further then roasted cinnamon sweet potatoes!

Ingredients:

  • 1 package precut sweet potato cubes (keeping it simple!)

  • ~2tbps EVOO

  • Pinch salt

  • 2 tsp ground cinnamon

Directions:

  • Preheat oven to 400°.

  • Toss sweet potato cubes with all ingredients on a baking sheet until everything is coated.

  • Spread out evenly on a baking sheet (try not to crowd or else they will steam instead of roast, preventing them from crisping).

  • Roast for ~10 minutes, then flip and roast for an additional 10-15 minutes, until they are soft and the edges start to darken slightly and crisp. Keep an eye on them, because they will go quickly from crispy to burnt!

  • Remove from oven and enjoy!
