Roasted Cinnamon Sweet Potatoes

Packed with vitamins, minerals, antioxidants and fiber, look no further then roasted cinnamon sweet potatoes!

Ingredients:
1 package precut sweet potato cubes (keeping it simple!)
~2tbps EVOO
Pinch salt
2 tsp ground cinnamon
Directions:
Preheat oven to 400°.
Toss sweet potato cubes with all ingredients on a baking sheet until everything is coated.
Spread out evenly on a baking sheet (try not to crowd or else they will steam instead of roast, preventing them from crisping).
Roast for ~10 minutes, then flip and roast for an additional 10-15 minutes, until they are soft and the edges start to darken slightly and crisp. Keep an eye on them, because they will go quickly from crispy to burnt!
Remove from oven and enjoy!
