Shrimp Tacos with Cilantro Crema
Still feeling the summer vibes with these AH-mazing shrimp tacos and ta-die-for cilantro crema.
This is another super healthy recipe, just look at all that color!! More color = more nutrients.
This is also a great and flexible choice for those picky ‘food-can’t-touch’ eaters. Just keep their plate out as you are prepping and throw ingredients on as you get them ready: tomatoes, avocado, cheese, mango. skrimps... Pick those battles. 🤪

1/4 cup oil
1/4 cup water
1/2 cup chopped green onions
1/2 cup cilantro leaves
1 clove garlic
1/2 teaspoon salt
juice of 2 limes
1/2 cup sour cream or full-fat Greek yogurt
2 teaspoons each chili powder and cumin
1/2 teaspoon each onion powder and garlic powder
1/2 teaspoon coarse sea salt
1 lb. shrimp, peeled and deveined, tails removed
2 cups shredded cabbage
8 small tortillas of choice
avocados, sliced mango, Cotija cheese, and lime wedges
Sauce: Pulse all sauce ingredients in a food processor or blender until smooth.
Slaw: Toss some of the sauce (not all) with the cabbage.
Shrimp: Pat shrimp dry then toss in a small bowl with spice mix to coat. Heat a drizzle of oil a large skillet over medium high heat. Add shrimp to pan and sauté for 5-8 minutes, flipping occasionally, until the shrimp are cooked through.
Taco: Assemble to your liking and enjoy!
