Simple Healthy Balsamic Chicken
A quick and simple balsamic marinade takes your average chicken dinner to a new level of deliciousness!
Healthy, fast, and ready for dinner in no time!
1 pound chicken breast
1 tsp dried rosemary
½ tsp salt
1 tsp onion powder
1 tsp garlic powder
¾ c balsamic vinegar
2 Tbsp EVOO
Crush rosemary with mortar and pestle and combine with salt, garlic powder, onion powder, and balsamic in a large sealable plastic bag.
Dice chicken into ~1 inch cubes. Marinate for 1 hour up to 1 day.
Sauté chicken on medium high heat until cooked through. Chicken will look dark quickly – that’s just the balsamic caramelizing!
You can serve this a million different ways: along side a caprese salad, over some fresh pasta, or as a part of a big Mediterranean smorgasbord.
