Strawberry and White Chocolate Energy Balls




The kids and I BOTH need a healthy, filling snack that we can grab on the go and these are PERFECT!


Ditch the goldfish, the granola bars, the fruit snacks and try these.


Just like I tell my kids, "Does mama EVER give you something that doesn’t taste good? NO! JUST TRUST ME!"

Ingredients:

  • 1 cup old-fashioned rolled oats

  • 1/4 cup chia seeds

  • 1/4 tsp. salt

  • 1/2 cup nut or sunflower butter

  • 1/4 cup honey or real maple syrup

  • 2 tsp. vanilla extract

  • 1/2 cup white chocolate

  • 1 cup freeze-dried strawberries

Directions:

  • Place oats, chia, and salt in food processor and pulse until finely ground.

  • Add nut or sunflower butter, honey (or maple syrup), vanilla, and strawberries. Blend until ingredients come together and form a dough-like ball.

  • Pull blade out of processor, add white chocolate, and use your hands to mix together.

  • Use a small cookie scoop (or spoon) to scoop the mixture into balls. If using a spoon, roll them into balls.

  • Transfer the balls to the refrigerator to chill.

  • If you're feeling fancy, you can drizzle some melted white chocolate and crushed freeze-dried strawberries overtop after the balls chill for at least 30 minutes.

  • Store energy balls in an airtight container in the refrigerator for up to 10 days.
