Tomato Watermelon Salad with Mint and Feta
I love summer and all the fresh produce at our fingertips just overflowing with flavor. Tomatoes actually smell and taste like tomatoes, the watermelon is crisp, sweet, and vibrant.

This salad magically marries ingredients that at first you'd think shouldn't go together, but oh my gosh do they ever. The flavor combo is a juicy burst of summer in your mouth. It's cooling, refreshing, and hydrating - perfect for those hot summer days. It's also super versatile. You can switch out the fruit (maybe try some fresh juicy peaches?), add some thinly sliced red onion, a drizzle of honey, even some spinach or arugula. And of course it's:

Ingredients:
1 small(ish) round seedless watermelon (the round ones tend to be sweeter)
3 medium tomatoes, or whatever you have on hand
4-6 ounces feta cheese, diced or crumbled
handful of mint leaves, chiffonaded
1 lime, juiced
optional: flaky sea salt to taste
Directions:
Cut watermelon and tomatoes in about the same size, be that big chunks or 1 inch cubes. (I used a melon baller for the watermelon.) Place in a bowl, add feta, and drizzle with lime juice. Gently toss to combine.
If desired, season with salt just before serving. Depending on how much and how salty your feta is, you may or may not need the extra salt.
