Vanilla Cinnamon Energy Balls

Ingredients:
1 cup rolled oats
1/4 cup vanilla protein powder
1 Tbsp ground cinnamon (plus extra for coating)
1/4 to 1/3 cup nut butter or sunflower butter
1-2 tsp vanilla extract
1/4 cup maple syrup or honey
Directions:
Grind oats in a food processor then add all other ingredients and quickly pulse them until mixed. If you don't have a food processor, don't worry! You can just combine all these ingredients and form the balls, you will just get a different textured ball - but equally yummy!
You might need to add more honey or nut butter if the batter gets to dry.
Roll into 1-1.5 inch balls and place on a cookie tray or plastic ware with parchment paper underneath.
Let them freeze for 20-30 minutes then transfer into a Ziploc bag.
Dust with additional cinnamon and vanilla protein if desired.
Keep in fridge or freezer for up to 6 weeks.
